ALBA TRUFFLE SHOW

ALBA TRUFFLE SHOW

Entertainment, culture and fun between cooking shows, encounters and sensory experiences, with a great protagonist on stage: the Alba White Truffle

To enrich every weekend of the Fair, next to the World Market of the Alba White Truffle, the appointment with the "Alba Truffle Show" is also renewed this year and organized with strictly limited admission, in full compliance with anti-Covid measures, to ensure maximum safety for the participants. It will be held in the prestigious location inside the Cortile della Maddalena.

The Alba Truffle Show celebrates this year the most precious of the underground mushrooms in all its nuances, set up as a series of cultural and gastronomic events. Great chefs and cooks of these territories, united by the passion for truffles and the culture of good food and good taste, will take turns  on stage and in the kitchen.

The focus of the Alba Truffle Show are the Foodies Moments, exclusive admission events dedicated to gourmets where you can discover the best combinations of excellent cuisine and the Alba White Truffle. Every weekend of the Fair and for the special opening Monday and Tuesday  December 7th & 8th at 11.00 and 18.00, the top-level cooking shows will allow you to discover the secrets of the most popular national and international chefs who, for the occasion, devote their creativity to dishes tailored to the white gold of the Langhe.

The guests of the Foodies Moments are greeted with the welcome offered by the Alta Langa DOCG Consortium, official sparkling wine of the International Alba White Truffle Fair, and accompanied in a cozy and privileged dimension perfect for a foray into the prestigious kitchens to learn and enjoy the best combinations of cuisine and truffles.

Each cooking show is translated into English to allow the international public to participate in this immersive opportunity in the world of haute cuisine.

The most important national and international chefs will take turns in the kitchen of the Alba Truffle Show, together with the chefs of Langhe, Roero and Monferrato. So here you have:

Luca Zecchin of “Guido da Costigliole”, Andrea Ribaldone of “Identità Golose Milano”, Christianand and Manuel Costardi of “Christian and Manuel Ristorante”, Flavio Costa of the “Ristorante 21.9”, Pasquale Laera of the “Ristorante Borgo Sant’Anna”, Federico Gallo from the “Locanda del Pilone”, Paolo Griffa of “Le Petit Royal”, Claudio Vicina from the “Ristorante Casa Vicina – Eataly”, Gabriele Boffa of the “Relais Sant’Uffizio”, Marc Lanteri of the “Ristorante al Castello”, Andrea Larossa of the “Ristorante Larossa”, Davide Caranchini of the “Ristorante Materia”, Alessandro Negrini and Fabio Pisani of the “Ristorante Voce Aimo and Nadia”, Marco Sacco of the “Ristorante Piccolo Lago”, Damiano Nigro of the restaurant of the same name, Stefano Sforza of the “Ristorante Opera”, Ugo Alciati of “Guido Ristorante”, Massimiliano Prete of “Sesto Gusto”, Walter Ferretto of “Ilcascinalenuovo”, Viviana Varese of the “Ristorante VIVA”, Matteo Baronetto of the “Ristorante Del Cambio”, Davide Palluda of the “Ristorante All’Enoteca”, Alfredo Russo of the “Dolce Stil Novo”, Federico Zanasi of the “Ristorante Condividere”, Eugenio Boer of the “Ristorante Bu:r”, Michelangelo Mammoliti of “La Madernassa”, Luca Nataliniof the “Ristorante Al Pont de Ferr”, Lorenzo Cogo of the “Ristorante El Coq”, Riccardo Bassetti from “Il Porticciolo”, Francesco Oberto of the “Ristorante da Francesco”, Umberto De Martino of the “Ristorante Florian Maison”, Massimiliano Musso of the “Ristorante Albergo Cà Vittoria”, Massimo Camia restaurant of the same name, Enrico Marmo from the “Osteria Arborina” and  Marco Stabile of the “Ora d’Aria”.

Among the events confirmed this year, due to the great success achieved in the past edition, is the Atelier della Pasta Fresca each Saturday. The workshops have been renewed and extended from 3 to 5 encounters where you can learn the secrets of the processing techniques of a culinary specialty that is much more than a food. It’s an ancient ritual handed down from generation to generation, once a moment of celebration and conviviality and today synonymous with refinement, which will be revived thanks to "I Tre Chef", Albagnulot & Co. - edited by chef Walter Ferretto, Fulvio Siccardi and Diego Pattarino - and to “Plin”: it is the famous “pizzicotto” that gives its name to Ugo Alciati's fresh pasta workshop.

For those wishing instead to discover the organoleptic characteristics of Tuber magnatum Pico, the Alba Truffle Show is also home of the Sensory Analysis of the Truffle. Led by a Sensory Analysis judge from the National Center for Truffle Studies, a series of workshops will allow you to discover all the secrets of the most famous mushroom in the world, including olfactory tasting and practical tests. This is a special encounter to find out how a truffle is chosen, how its quality is discerned, how it’s preserved and the best ways to consume it, so that you can better appreciate it.

To make the sensory experience that the Alba White Truffle can offer even more satisfying, you can’t miss out on the opportunity to discover the great wines of the Langhe, Roero and Monferrato areas by participating in the Wine Tasting Experience® organized in collaboration with "Strada del Barolo and great Langa wines”. This is an original tasting formula dedicated to the discovery of the extraordinary wine-making heritage of the area, among which the long-aged red wines stand out, standard-bearers of Italian enology all over the world.

Every weekend, highly experienced winemakers and sommeliers will guide participants on a journey through the varieties of wines and labels of the territory, revealing their characteristics and curiosities.

The Wine Tastings will be held in Italian and English every Saturday and Sunday, at 3.30 pm and 5.30 pm.

During the event, there will also be several workshops dedicated to the culinary excellences of Piedmont, whose calendar will be updated directly on the Fair website.
